Sodium Benzoate (sodium benzoate) is a commonly used food preservative

Physical and Chemical Properties

*Solubility: soluble in water (solubility at 20℃ is about 53 g/100 mL), slightly soluble in ethanol.

*Chemical properties:

-Aqueous solution is alkaline (pH about 8), because sodium benzoate is the sodium salt of benzoic acid, can be hydrolyzed in water to generate benzoic acid.

-Better antiseptic effect under acidic condition: when pH<4.5, the proportion of free state of benzoic acid is high and the antimicrobial activity is strong; when pH increases, the antiseptic effect decreases.
