Glucona Delta Lactone(GDL), a non-toxic white crystalline powder, is obtain from the oxidation of glucose to gluconic acid or its salts by purification, decolorization, concentration and crystallization. GDL,soluble in water,slow decomposition under 25ºC,is widely used in food industry.
Glucono Delta Lactone is a food additive that is a white, odorless crystalline powder. The main purpose of gluconate is as a protein coagulant, can be used for tofu production; sour agent, can be used for fruit juice drinks and jelly; preservatives, can be used for fish, meat, poultry, shrimp and other preservative preservation, Not browning, while maintaining the elasticity of meat; leavening agent, and sodium bicarbonate compatibility, mixed into a baking powder for bread food. As a chelating agent, can be used for grape juice or other berry juice, add this product to prevent the formation of tartar. For dairy products, can prevent the formation of milk.

GDL is a kind of excellent multifunctional food additive.
It is mainly used as protein coagulant, acidifier, expander, preservative, seasonings, chelating agent, colour-preserver,etc.
It is widely applied to food, daily chemical industry, pharmaceuticals, cosmetics. Plastic and resinxous modification, electrodeposition and polish, metal-surface cleaning and organic synthesis, etc.
Use GDL as concreting to make bean curd, which character is whiteness and delicateness, salineless,without albumen loss and the high rate of output, also operate convenience. Whereas a little sourness for only GDL in precessing tofu, herein, we usually mix GDL and CaSO4 or other concretion in rate of 1:3~2:3 for making bean curd, with dosage 2.5% of dry bean, and best temperature about 4ºC.
GDL can be used in medication such as Glucose and some other medicine, as the nutrition additive avail to health.
