1. Slow-release acidifier: GDL dissolves quickly when added to an aqueous solution and slowly hydrolyzes to gluconic acid, resulting in the same mild acidifying effect as lactic acid bacteria. This property makes it an ideal slow-release acidifier that ensures a gradual and continuous reduction of the pH level to equilibrium.
2. Protein coagulant:GDL is an effective coagulant for milk and soy proteins. In tofu production, using GDL instead of brine or gypsum can produce white and tender tofu with no bitter or astringent flavor, no protein loss, and a high yield.
3. Preservative: GDL has antiseptic effect on mold and general bacteria, it can be used for fish, meat, poultry, shrimp, etc. It can make the products look glossy and not browning, and at the same time keep the elasticity of meat.
4. Bulking agent: GDL is paired with sodium bicarbonate and mixed to make baking powder. When heated, gluconic acid reacts with sodium bicarbonate to produce carbon dioxide, which has good puffing effect and no odor, especially suitable for pastry and fried food.
